It probably derives from caillou, pebble, which itself comes from the Gallic *caljavo. There is a MF word caillouter, which means to decorate with pebbles. There is also, however, an OBret word, caiou, which means the ramparts of a fortification, and it is possible that the term is used to describe the shape of the tower.
